In Dr. Davis’ journey since Wheat Belly came out he has met hundreds and hundreds of people who were plagued with chronic health problems like diabetes, heart disease, obesity, and arthritis whom the healthcare system had utterly failed. These are people he met in person at Wheat Belly events and through his website where he publishes their stories on a regular basis. What these people all have in common is that they decided to take their health into their own hands to great success. Undoctored documents this movement and helps readers navigate becoming “undoctored” themselves. To that end, here are some simple steps that Dr. Davis recommends to people who are looking to bring the DIY spirit to their own health.
One half of all American adults have at least one chronic disease and one in four have two. 86% of all healthcare spending is on chronic disease. Obviously, there is a lot of room for improvement and Dr. Davis hopes his message will fall on receptive ears. Dr. Davis recognizes that there is a role for traditional healthcare in fighting acute illnesses, cancer, accidents, and hereditary diseases, but he is most concerned with the chronic conditions that take up so much healthcare bandwidth and do not seem to improve despite the growth in our knowledge about how to fight them.
-Agriculturists and geneticists changed wheat to semi-dwarf varieties with hybridization and chemical mutagenesis. Increase in glycoprotein content increases appetite; wheat is now more inflammatory.
-People stop eating wheat despite their doctor’s advice to the contrary and get better in spite of their doctor.
-Before grains, primitive people had tooth decay in 1-3% of teeth. After eating grains, populations had tooth decay in 16-49% of teeth, increase in bone disease, decrease in height, iron deficiency.
-Wheat is not GMO but does contain glyphosate, which is sprayed on it as a dessicant at harvesting.
-Wheat germ agglutenin (WGA) is highly toxic, makes the blood clot.
-Paleo diet – reverting back to the way people used to eat for the first 99.6% of their time on this planet.
-Hunter-gathers do not have diseases of civilization. No diabetes, no heart disease, no high blood pressure, no arthritis, no UC, no colon cancer, no skin rashes, no psychiatric disease. They don’t eat seeds of grasses, sugar, toxic oils.
-Seeds of grasses are foods of desperation.
-People think doctors know best. But health care is really a business. Consumes 17.5% of GDP. A huge wealth transfer. Most doctors are employees of hospital and get paid a percent of procedures. Decision makers in the health system are predatory; they are looking to make money off you with often unneeded procedures.
-Not recommending you diagnose yourself. Employ a compendium of strategies. Empowering health information and consumer technology now available. Doctors montetize health with things like statin drugs instead of educating.
-Data that backs up statin drug use is mostly marketing. Recommended diet contributes to heart disease.
-Suggested tests: advanced lipoprotein (NMR) testing, lipoprotein A, fasting glucose, HbA1c, 25-OH Vitamin D, full thyroid panel (not just TSH).
-Recommended websites include Dr. Davis’ websites, data tracking facilities, CureTogether.com, PatientsLikeMe.com.
-Broda Barnes basal body method for determining thyroid function is good, but armpit temperature is wildly inaccurate and can be 2-4 degrees off. Rectal temp is most accurate but inconvenient. Oral temp is most convenient; want oral temp of 97.3. Take iodine, track if it raises basal temperature.
-Followed Dr. Esselstyn’s diet years ago with bad results. Those type of diets regress endothelial dysfunction, but didn’t regress atherosclerotic plaque. Is a style of eating inconsistent with human adaptation.
-Joel asks if oils can be heated? Keep oil temp below 350. Can boil, saute, stir fry, bake below 350. Broiling, barbeque, deep frying have higher temps that are damaging to the oil.
-Heart plaque is caused by excess LDL, due to eating grains and sugars, which induce high blood sugars and inflammation. Sucrose, fructose, coconut sugar are bad sugars. There are good sweetener alternatives.
-Net cap of 15 grain of carbs per meal.
-Doctor is least informed person about diet in the room.
-Potatoes – when baked, mashed, become pure sugar. Eat them raw.
-Avoid anything that disrupts bowel flora, such as chlorinated water, antibiotics.
