Every day is OK, John.
But you can get more bang for your buck with any health protocol by doing it 3 days on and at least 1 day off, and 3 days on and at least 1 day off, and so forth. :)

Raw eggs are better for the intestinal microbiome.
Cooked eggs are better for absorbing nutrients and stimulating metabolism.
It’s pretty much a “six of one, half a dozen of the other” scenario when eating one or two eggs a day.
Otherwise, excess raw eggs bind and block biotin (vitamin H).
