Iodine is low in the mountains (where it washes away) and low in the lowlands (where goitrogens accumulate).
That’s why, once upon a time, iodine was found in wheat samples from Nephi, Utah, more often than any other place in the U.S., yet goiter from iodine deficiency was rampant.
